Description

Welcome, food enthusiasts! If you love comfort food and Italian cuisine, you’re in for a treat with this Slow Cooker Tuscan Chicken Meatballs with Gnocchi recipe. Whether you’re new to slow cooking or a seasoned pro, this recipe will guide you through creating a flavorful, hearty meal that’s both easy to make and utterly satisfying. Slow cookers are a fantastic way to bring out the deep, rich flavors of Tuscan dishes while keeping the preparation fuss-free.

Ingredients

Scale
  • 1 pound ground chicken
  • 1/4 cup breadcrumbs (optional: substitute with almond flour for gluten-free)
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 can (14.5 oz) diced tomatoes
  • 1/2 cup heavy cream
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 1 package (16 oz) gnocchi
  • Fresh basil and grated Parmesan for garnish

Instructions

  • Prepare the Meatballs
In a large bowl, mix the ground chicken, breadcrumbs, Parmesan, egg, oregano, garlic powder, salt, and pepper. Shape the mixture into small meatballs, about 1 inch in diameter.
  • Brown the Meatballs
Heat olive oil in a skillet over medium heat. Brown the meatballs on all sides, but don’t worry about cooking them through as they will finish cooking in the slow cooker.
  • Transfer to Slow Cooker
Once browned, transfer the meatballs to your slow cooker. Add the diced tomatoes, heavy cream, and red pepper flakes (if using). Stir to combine and cover the meatballs in sauce.
  • Slow Cook
Set your slow cooker to low and cook for 4 to 5 hours, or until the meatballs are tender and fully cooked.
  • Add Gnocchi
In the last 30 minutes of cooking, add the gnocchi to the slow cooker. Stir them gently into the sauce, ensuring they cook through and soak up the rich flavors of the sauce.
  • Serve and Garnish
Serve the meatballs and gnocchi hot, garnished with fresh basil and grated Parmesan.

Notes

  • Fresh Herbs: For an extra burst of flavor, add fresh herbs like rosemary or thyme.
  • Make it Dairy-Free: You can substitute the heavy cream with coconut milk to make this recipe dairy-free.
  • Make it Spicy: Add more red pepper flakes or a splash of hot sauce if you prefer a spicier dish.
