Description

Hello, breakfast lovers! Are you ready to transform your mornings with a recipe that combines all your favorite breakfast elements into one delightful bite? These Sausage, Egg, and Cheese Hash Brown Cups are perfect for busy mornings, brunch gatherings, or meal prep. With crispy hash browns, savory sausage, and gooey cheese, these cups are a breakfast dream come true.

Ingredients

Scale
  • 20 oz refrigerated shredded hash brown potatoes (e.g., Simply Potatoes or Reser’s, defrosted if frozen)
  • 2 tablespoons extra virgin olive oil
  • 1 ½ teaspoons salt, plus a pinch for the eggs
  • Black pepper, to taste
  • 4 chicken breakfast sausage links (e.g., Wegmans Fully Cooked Breakfast with Sage Chicken Sausage)
  • 6 large eggs
  • 4 egg whites
  • 6 tablespoons shredded 2% cheddar cheese

Optional substitutions:

  • Use turkey sausage or vegetarian sausage for dietary preferences.
  • Replace cheddar cheese with mozzarella or a dairy-free alternative.

Instructions

Step1: Prepare the Hash Brown Cups

  1. Preheat your oven to 400°F. Coat a 12-cup muffin tin with cooking spray.
  2. In a large bowl, mix the hash browns with olive oil, salt, and pepper. Ensure even coating.
  3. Scoop the hash brown mixture into the muffin tin, pressing down and up the sides to form wells.
  4. Bake for 30 minutes until the edges are lightly browned.

Step2: Cook the Sausage

  1. Slice the sausages into small, bite-sized pieces.
  2. Mist a skillet with cooking spray and cook the sausage over medium heat until browned. Set aside.

Step3: Prepare the Egg Mixture

  1. In a large bowl, whisk together the eggs and egg whites. Season with a pinch of salt and pepper.
  2. Stir until thoroughly combined.

Step4: Assemble and Bake

  1. Evenly distribute the sausage pieces and shredded cheese into each hash brown cup.
  2. Spoon the egg mixture over each cup until full.
  3. Return the muffin tin to the oven and bake for 15 minutes, or until the eggs are set and golden.

Notes

  • Use freshly shredded potatoes for an even crispier texture.
  • If you’re short on time, prepare the hash brown cups in advance and refrigerate until ready to bake.
  • Experiment with add-ins like diced bell peppers, onions, or spinach for extra flavor and nutrition.
