  • ½ cup plus 2 tablespoons low-sodium soy sauce or tamari
  • ¼ cup honey
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons rice vinegar
  • 3 tablespoons creamy peanut butter or tahini
  • 1 tablespoon molasses or pomegranate molasses (optional)
  • 2 tablespoons fresh grated ginger
  • 3 cloves garlic, grated
  • 8 ounces Chinese-style egg noodles or rice noodles
  • 2 ½ cups low-sodium vegetable or chicken broth
  • 2 cups fresh baby spinach, roughly chopped
  • 2 tablespoons sesame or extra virgin olive oil
  • 3 cups shiitake or cremini mushrooms, sliced
  • 2 shallots, chopped
  • Black pepper, to taste
  • 2 tablespoons raw sesame seeds
  • 2 green onions, chopped for garnish

Optional substitutions:

  • Use gluten-free tamari for a gluten-free version.
  • For a vegan option, substitute honey with maple syrup or agave nectar.

Instructions

Step 1: Make the Sauce

In a bowl, combine ½ cup soy sauce, honey, balsamic vinegar, rice vinegar, peanut butter or tahini, molasses, 1 tablespoon of grated ginger, and 1 grated garlic clove. Whisk together with ⅓ cup of water until smooth.

Step 2: Cook the Noodles

Prepare the egg noodles or rice noodles according to the package instructions. Drain and set aside. In the same pot, add the broth and half of the soy sauce mixture. Stir in the chopped spinach and keep warm over medium heat.

Step 3: Caramelize the Mushrooms

Heat sesame oil in a large skillet over medium-high heat. Once hot, add the sliced mushrooms and cook for 5 minutes until golden and slightly crispy. Add chopped shallots, 1 tablespoon of grated ginger, and 2 garlic cloves. Sauté for another 4–5 minutes until fragrant. Season with 2 tablespoons soy sauce and black pepper, then stir in the sesame seeds. Cook for 2 more minutes before removing the mushrooms from the skillet.

Step 4: Finish the Noodles

In the same skillet, add the remaining soy sauce mixture and bring it to a simmer. Add the cooked noodles and toss them to coat in the sauce. Cook for 2–3 minutes until the noodles are well-coated and glossy.

Step 5: Serve and Enjoy!

Spoon the broth into bowls and top with the noodles. Layer the caramelized mushrooms on top, and garnish with green onions and chili oil if desired.

Notes

  • Use fresh ginger and garlic: This adds a bright and spicy kick to the sauce, enhancing the overall flavor.
  • If you can’t find shiitake mushrooms, cremini mushrooms work just as well. They have a meaty texture that complements the noodles.
