  • ¾ cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup sour cream

For the Topping:

  • 1 cup caramel sauce
  • 1 cup sweetened shredded coconut, toasted
  • ½ cup semisweet chocolate, melted

Instructions

Step 1: Prepare the Crust

  1. Preheat your oven to 325°F (165°C) and grease a 9-inch springform pan.
  2. Combine the chocolate cookie crumbs and melted butter in a bowl.
  3. Press the mixture into the bottom of the pan to form an even crust. Set aside.

Step 2: Make the Filling

  1. In a large bowl, beat the cream cheese and sugar until smooth.
  2. Add the eggs, one at a time, mixing well after each addition.
  3. Stir in the vanilla extract and sour cream until fully combined.

Step 3: Bake the Cheesecake

  1. Pour the filling over the prepared crust.
  2. Bake for 50-60 minutes or until the center is set but still slightly jiggly.
  3. Turn off the oven, leave the door slightly open, and let the cheesecake cool for 1 hour.

Step 4: Chill and Add Toppings

  1. Refrigerate for at least 4 hours or overnight.
  2. Spread caramel sauce over the chilled cheesecake.
  3. Sprinkle with toasted coconut and drizzle with melted chocolate.

Notes

  • Use room-temperature cream cheese for a smoother filling.
  • Toast the coconut for a nutty flavor and crunchy texture.
  • For a richer caramel topping, use homemade caramel sauce.
