- 1 tablespoon lemon juice
- 1/4 cup granulated sugar
- 1/4 cup brown sugar
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1 tablespoon cornstarch
- 1 tablespoon water
- 1 teaspoon vanilla extract
- 1 package pre-made pie crust
- 1/2 cup salted caramel sauce
- Flour for dusting
- Nonstick cooking spray
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a 12-cup muffin tin with nonstick spray.
- In a large bowl, combine diced apples, lemon juice, granulated sugar, brown sugar, cinnamon, nutmeg, and salt. Let sit for 10 minutes.
- Mix cornstarch and water in a small bowl to make a slurry, then add to the apple mixture with vanilla extract.
- Roll out the pre-made pie crust on a floured surface and cut circles using a 4-inch round cutter.
- Press each crust circle into the muffin tin cups, forming a pie shell.
- Spoon the apple filling into each crust, filling about 3/4 full.
- Drizzle salted caramel sauce over each filled pie.
- Create a lattice top or cover with a whole crust and cut small vents.
- Bake for 20-25 minutes, or until the crust is golden brown and the filling is bubbly.
- Remove from the oven and drizzle with more salted caramel while warm. Let cool for 5 minutes before serving.
