  • 1 (8-oz) package cream cheese, softened
  • 1 (10-oz) can Rotel diced tomatoes and green chilies, drained
  • 1 (30-32oz) bag frozen tater tots
  • 1 tsp salt, or to taste
  • ½ tsp pepper, or to taste
  • ¼ tsp garlic powder
  • ¼ tsp onion powder
  • 2 cups shredded cheddar cheese
  • 8 large eggs
  • 2 cups milk

Instructions

 

  1. Preheat the Oven: Preheat your oven to 350ºF (175ºC). Lightly spray a 9×13-inch baking dish with cooking spray.
  2. Cook the Sausage: In a large skillet, cook the sausage over medium heat until it’s browned and no longer pink. Drain any excess fat from the skillet.
  3. Combine with Cream Cheese and Rotel: Add the softened cream cheese and drained Rotel to the skillet with the cooked sausage. Stir until well combined and creamy.
  4. Mix with Tater Tots and Cheese: In a large mixing bowl, combine the frozen tater tots, sausage and cream cheese mixture, and shredded cheddar cheese. Toss until everything is evenly distributed.
  5. Transfer to Baking Dish: Pour the mixture into the prepared 9×13-inch baking dish, spreading it out evenly.
  6. Prepare the Egg Mixture: In a separate bowl, whisk together the eggs, salt, pepper, garlic powder, onion powder, and milk until well combined.
  7. Pour Over Tater Tot Mixture: Slowly pour the egg mixture over the tater tot mixture in the baking dish, ensuring it covers the entire surface.
  8. Bake: Bake the casserole, uncovered, in the preheated oven for 60 to 70 minutes, or until the eggs are set and the top is golden brown.
