Ingredients

Scale

Crust:

  • 1 ½ cups chocolate cookie crumbs (Oreos work great!)
  • ¼ cup melted butter

Cheesecake Filling:

  • 3 (8 oz) packages cream cheese, softened
  • 1 cup sugar
  • 1 cup sour cream
  • 1 tsp vanilla extract
  • 3 large eggs
  • 1 cup creamy peanut butter
  • 1520 Reese’s peanut butter cups, chopped

Topping:

  • 1 cup heavy cream
  • ½ cup chocolate chips
  • ½ cup peanut butter chips
  • Caramel sauce (optional, for drizzling)
  • Whipped cream (optional, for garnish)

Optional Substitutions:

  • Gluten-Free: Use gluten-free chocolate cookie crumbs.
  • Dairy-Free: Substitute cream cheese, sour cream, and heavy cream with dairy-free alternatives.

Instructions

Step 1: Prepare the Crust

  1. Preheat your oven to 325°F (163°C).
  2. Combine chocolate cookie crumbs and melted butter in a mixing bowl.
  3. Press the mixture firmly into the bottom of a 9-inch springform pan. Set aside.

Step 2: Make the Cheesecake Filling

  1. Beat softened cream cheese and sugar in a large bowl until smooth.
  2. Add sour cream and vanilla extract, mixing until well combined.
  3. Incorporate eggs one at a time, beating after each addition.
  4. Mix in peanut butter until the batter is creamy and smooth.
  5. Fold in half of the chopped Reese’s cups.

Step 3: Bake the Cheesecake

  1. Pour the batter over the prepared crust, spreading it evenly.
  2. Bake for 55–60 minutes, or until the center is set and edges are lightly browned.
  3. Turn off the oven and let the cheesecake cool inside with the door slightly open for 1 hour.

Step 4: Chill the Cheesecake

  1. Remove the cheesecake from the oven and allow it to cool completely at room temperature.
  2. Refrigerate for at least 4 hours or overnight for the best texture.

Step 5: Prepare the Ganache

  1. Heat heavy cream in a small saucepan over medium heat until it begins to simmer.
  2. Remove from heat and stir in chocolate chips until smooth.
  3. Let the ganache cool slightly before drizzling over the cheesecake.

Step 6: Decorate and Serve

  1. Top the cheesecake with the remaining chopped Reese’s cups and peanut butter chips.
  2. Drizzle caramel sauce and add whipped cream if desired.
  3. Slice, serve, and enjoy the indulgence!

Notes

  • Room Temperature Ingredients: Ensure your cream cheese and eggs are at room temperature for a smoother batter.
  • Avoid Overbaking: A slight jiggle in the center means it’s perfectly baked—it will set as it cools.
  • Chill Time is Key: For the best flavor and texture, don’t skip the refrigeration step.
