  • 3 ripe peaches, sliced
  • 1/3 cup unsalted butter, melted
  • 1/2 cup brown sugar
  • 1 1/4 cups all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/3 cup whole milk
  • 1 tsp vanilla extract

You can substitute the whole milk with almond or oat milk if you prefer a dairy-free version. You can also replace the brown sugar with coconut sugar for a refined sugar-free option.


Instructions

Step 1: Preheat the oven to 350°F (175°C). Generously grease a muffin tin to ensure the cakes come out easily.

Step 2: Pour the melted butter evenly into the bottoms of 6 muffin cups. Then, sprinkle each cup with brown sugar. Arrange the peach slices in a circular pattern over the sugar.

Step 3: In a medium bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.

Step 4: In a large bowl, beat the granulated sugar and eggs together until the mixture is light and fluffy. Stir in the milk and vanilla extract.

Step 5: Gradually fold the dry ingredients into the wet ingredients until just combined. Be careful not to overmix the batter to keep the cake light and airy.

Step 6: Spoon the batter evenly over the peach slices in the muffin tin, ensuring the fruit is completely covered.

Step 7: Bake for 20–25 minutes, or until a toothpick inserted into the center comes out clean. Let the cakes cool for 5 minutes.
