  • 500 grams of cherry tomatoes, halved
  • 1 medium onion, finely chopped
  • 1 clove of garlic, minced
  • 4 sprigs of fresh thyme
  • Juice of 1 lemon
  • 2 tablespoons of olive oil
  • Salt and pepper, to taste

Optional substitutions:

  • If you have dietary restrictions, you can replace cod with another white fish like haddock or pollock.
  • For a more intense flavor, substitute fresh thyme with rosemary.

Instructions

Step 1: Prepare the Aromatic Base

Begin by peeling and finely chopping the onion and garlic. Heat one tablespoon of olive oil in a pan over medium heat. Sauté the onion and garlic until the onion turns translucent, about 2-3 minutes. Transfer this mixture to an oven-safe baking dish.

Step 2: Sear the Cod Fillets

Using the same pan, lightly sear the cod fillets for about one minute on each side. The goal is to give the cod some color without fully cooking it. Once seared, place the fillets over the sautéed onions and garlic in the baking dish.

Step 3: Add the Tomatoes and Seasonings

Wash and halve the cherry tomatoes. Scatter them around the cod fillets in the baking dish. Sprinkle fresh thyme leaves, salt, and pepper over the tomatoes and cod. Drizzle the entire dish with the remaining tablespoon of olive oil for a flavorful finish.

Step 4: Roast in the Oven

Preheat your oven to 180°C (350°F). Place the baking dish in the oven and roast for 20 minutes or until the cod is fully cooked and the tomatoes have softened.
