Ingredients

- 2 medium onions, sliced
- 3–4 cloves of garlic, minced
- 14 oz (400g) mushrooms, sliced
- 10 oz (300g) fresh spinach
- 1/2 cup (125ml) low-sodium vegetable broth
- Freshly cracked black pepper, to taste
- 1 teaspoon Italian seasoning
- 1/2 cup parmesan cheese, grated
- 3/4 cup heavy whipping cream (adjust to taste)
- 1 teaspoon red chili pepper flakes (optional)

Instructions
Step 1: Cook the Pasta
Boil your pasta in salted water until al dente according to package instructions. Drain and set aside.

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add sliced onions and sauté for 2-3 minutes until they become translucent and slightly browned. Remove onions from the skillet and set aside.
