Ingredients

Scale
  • 2 cups basmati rice, rinsed
  • 3 cups chicken broth
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 2 large onions, thinly sliced
  • 2 cloves garlic, minced
  • 4 chicken thighs (boneless, skinless)
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup shredded Gruyère or mozzarella cheese (optional)
  • Fresh parsley, chopped (for garnish)

Optional Substitutions:

  • Replace Gruyère with cheddar for a sharper flavor.
  • Use quinoa instead of rice for a protein-packed twist.
  • Substitute butter with olive oil for a lighter version.

Instructions

Step1: Sear the Chicken

  • Heat olive oil in a large skillet over medium heat.
  • Season chicken thighs with salt, pepper, and thyme.
  • Sear chicken for 4-5 minutes per side until golden brown.
  • Remove chicken and set aside.

Step2: Caramelize the Onions

  • In the same skillet, melt butter over medium-low heat.
  • Add sliced onions and sauté for 15-20 minutes, stirring occasionally, until deeply golden and caramelized.

Step3: Add Garlic and Rice

  • Stir minced garlic into the caramelized onions and cook for 2 minutes until fragrant.
  • Mix in the rinsed basmati rice, ensuring it’s coated in the onion mixture.

Step4: Simmer with Chicken Broth

  • Pour in chicken broth and bring to a boil.
  • Reduce heat to low, cover, and simmer for 15-18 minutes until the rice absorbs the liquid.

Step5: Reintroduce the Chicken

  • Place the seared chicken thighs on top of the cooked rice.
  • Cover and let rest for 5 minutes.

Step6: Add Cheese and Garnish

  • If desired, sprinkle shredded cheese over the dish and allow it to melt.
  • Garnish with fresh parsley before serving.

Notes

  • Use a heavy-bottomed skillet to avoid burning the onions.
  • For extra flavor, deglaze the skillet with a splash of white wine before adding the broth.
  • To make it vegetarian, substitute chicken with mushrooms and use vegetable broth.
