- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 4 garlic cloves, minced
- 1 teaspoon dried oregano
- ½ teaspoon red pepper flakes
- ½ teaspoon ground black pepper
- 1 teaspoon salt
- 1 cup chicken broth
- ½ cup dry white wine
- 1 tablespoon fresh lemon juice
- 1 (14 oz) can artichoke hearts, drained and halved
- ½ cup green olives
- ½ cup Kalamata olives
- 1 tablespoon chopped fresh parsley
Instructions
- Pat chicken breasts dry and season with salt, pepper, oregano, and red pepper flakes.
- Heat olive oil in a large skillet over medium heat.
- Sear the chicken for 3-4 minutes on each side until golden.
- Add minced garlic and sauté for 1 minute until fragrant.
- Pour in chicken broth and white wine, then stir in lemon juice.
- Add artichoke hearts, green olives, and Kalamata olives.
- Reduce heat, cover the skillet, and simmer for 12-15 minutes.
- Uncover and simmer an additional 2-3 minutes to slightly reduce the sauce.
- Garnish with fresh parsley and serve warm.
