  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 4 garlic cloves, minced
  • 1 teaspoon dried oregano
  • ½ teaspoon red pepper flakes
  • ½ teaspoon ground black pepper
  • 1 teaspoon salt
  • 1 cup chicken broth
  • ½ cup dry white wine
  • 1 tablespoon fresh lemon juice
  • 1 (14 oz) can artichoke hearts, drained and halved
  • ½ cup green olives
  • ½ cup Kalamata olives
  • 1 tablespoon chopped fresh parsley

Instructions

  1. Pat chicken breasts dry and season with salt, pepper, oregano, and red pepper flakes.
  2. Heat olive oil in a large skillet over medium heat.
  3. Sear the chicken for 3-4 minutes on each side until golden.
  4. Add minced garlic and sauté for 1 minute until fragrant.
  5. Pour in chicken broth and white wine, then stir in lemon juice.
  6. Add artichoke hearts, green olives, and Kalamata olives.
  7. Reduce heat, cover the skillet, and simmer for 12-15 minutes.
  8. Uncover and simmer an additional 2-3 minutes to slightly reduce the sauce.
  9. Garnish with fresh parsley and serve warm.

Notes

  • Use chicken thighs instead of breasts for a juicier result.
  • Replace white wine with more chicken broth + 1 tsp white wine vinegar if preferred.
