  • 1/2 cup cocoa powder

  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk
  • 1/2 cup hot water
  • 1 cup caramel sauce
  • 1/2 cup chocolate shavings

Instructions

  • Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  • In a medium bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt.
  • In a large bowl, cream the butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  • Gradually add the dry ingredients to the wet mixture, alternating with buttermilk, beginning and ending with the dry ingredients. Mix until just combined.
  • Stir in the hot water until the batter is smooth.
  • Divide the batter evenly among the prepared muffin cups, filling each about 2/3 full.
  • Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Allow the cupcakes to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  • Once cooled, spread a generous amount of caramel sauce over each cupcake and sprinkle with chocolate shavings.
