Peaches:

  • 2 yellow peaches, pitted and sliced

Peach Glaze:

  • ½ cup (160 g) peach preserves
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon soy sauce
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • ½ teaspoon garlic, minced
  • ½ teaspoon kosher salt
  • ⅛ teaspoon black pepper
  • ⅛ teaspoon red pepper flakes

Chicken:

  • 2 pounds boneless, skinless chicken thighs
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon chili powder
  • 2 tablespoons extra virgin olive oil
  • 1 medium jalapeno pepper, thinly sliced

Instructions

Step 1: Prepare the Peach Glaze

In a medium bowl, mix together all the ingredients for the peach glaze until fully combined. Set aside.

Step 2: Season the Chicken

Pat the chicken thighs dry with a paper towel. In a small bowl, combine the kosher salt, black pepper, and chili powder. Rub this seasoning mixture evenly over the chicken thighs.

Step 3: Cook the Chicken

Heat 2 tablespoons of olive oil in a large nonstick skillet over medium heat. Once the oil is hot, add the chicken thighs. Cook for about 5 minutes on one side, then flip the chicken, reduce the heat to medium-low, and cook for an additional 5 minutes, or until the chicken reaches an internal temperature of 165°F.

Step 4: Add the Jalapenos and Peaches

Remove the chicken from the skillet and tent it with foil to keep warm. In the same skillet, raise the heat back to medium and add the sliced jalapenos. Cook for 3 minutes, then add the sliced peaches. Continue cooking for another 3 minutes until the peaches are softened.

Step 5: Add the Peach Glaze

Pour the prepared peach glaze into the skillet with the jalapenos and peaches. Stir everything together to ensure the jalapenos and peaches are coated evenly.

Step 6: Finish the Chicken

Add the chicken back into the skillet, spoon the peach glaze over the top of the chicken, and cook for another 1-2 minutes until everything is heated through.

  • Fresh Ingredients Matter: Use ripe peaches for the best flavor. If fresh peaches are not available, canned or frozen peaches can be used in a pinch.
