Ingredients

Scale

  • 1½ Tbsp Olive Oil
  • 1 Large Sweet Onion, finely diced
  • 2 Stalks Celery, sliced
  • 2 Medium Carrots, sliced
  • 2 Cups Button Mushrooms, quartered
  • 23 Garlic Cloves, pressed/minced
  • 1 Tbsp Italian Seasoning
  • 3 Cups Shredded Cooked Chicken
  • 1 Can (15 oz) Italian Tomato-Basil Sauce
  • 7 Cups Chicken Broth
  • 1 Cup Frozen Corn, fresh or frozen
  • 1 Cup Chopped Green Beans, fresh or frozen
  • 2 Tbsp Chopped Fresh Parsley, to garnish
  • Salt and pepper, to taste
  • ½ Cup Grated Parmesan Cheese

Optional Substitutions:

  • Gluten-Free Option: Ensure that the Italian Tomato-Basil Sauce and Chicken Broth are gluten-free.
  • Dairy-Free Option: Skip the Parmesan Cheese or use a dairy-free alternative.

Instructions

Step 1: Heat the olive oil in a large stockpot over medium-high heat.

Step 2: Add the diced onion, sliced celery, carrots, mushrooms, and minced garlic. Sauté these veggies along with Italian seasoning until they soften, which should take about 8-10 minutes.

Step 3: Stir in the shredded cooked chicken, tomato-basil sauce, and chicken broth.

Step 4: Bring the mixture to a simmer, and then add the corn and green beans. Allow the soup to cook for about 15-20 minutes, letting the flavors meld together.

Step 5: Season the soup with salt and pepper to your liking.

Step 6: Serve hot, topped with grated Parmesan cheese and a sprinkle of fresh parsley for added freshness.

Tip: For an extra flavor boost, use homemade chicken broth and freshly grated Parmesan cheese.

Notes

  • Use Fresh Ingredients: Whenever possible, opt for fresh vegetables rather than frozen. They retain more flavor and texture, making your soup more vibrant.
  • Add Pasta for a Heartier Soup: To make it even more filling, you can add some pasta such as small shells or ditalini.
  • Herb Variations: Experiment with adding fresh basil, thyme, or rosemary for a different flavor profile.
