Description

Ingredients

  • 1 cup graham cracker crumbs
  • 2 tablespoons granulated sugar
  • 4 tablespoons unsalted butter, melted
  • 12 oz cream cheese, softened
  • 1/3 cup sour cream
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 large egg, room temperature
  • 1/4 cup heavy cream
  • 1/4 cup blackberry jam, slightly warmed
  • 12 fresh blackberries, for topping

Instructions

  1. Preheat oven to 325°F (160°C). Line a mini cheesecake pan with liners or use a silicone mold.
  2. In a bowl, mix graham cracker crumbs, 2 tbsp sugar, and melted butter until well combined.
  3. Press 1 tablespoon of crust mixture into each mold. Bake for 6 minutes, then cool completely.
  4. In a large bowl, beat softened cream cheese until smooth. Add sour cream, sugar, vanilla, and egg. Beat until just combined.
  5. Add heavy cream and mix until the batter is silky and smooth.
  6. Spoon the batter over the crusts. Drop small dots of warm blackberry jam on top and swirl using a toothpick.
  7. Bake for 15–18 minutes, until centers jiggle slightly.
  8. Let cheesecakes cool completely, then chill in the fridge for at least 3 hours or overnight.
  9. Before serving, top each mini cheesecake with a fresh blackberry.
