- 1 tablespoon olive oil
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 2 cups chopped romaine lettuce
- 1 cup cherry tomatoes, halved
- 1 cup canned sweet corn, drained
- 1/2 cup diced cucumber
- 1/2 cup guacamole or avocado crema
- Red pepper flakes for garnish
Instructions
- In a bowl, mix olive oil, paprika, garlic powder, salt, and pepper. Rub the mixture over the chicken breasts and let them marinate for at least 10 minutes.
- Preheat a grill or grill pan to medium heat. Grill the chicken for 6–7 minutes on each side or until fully cooked. Let rest for 5 minutes, then slice into strips.
- Prepare a large salad bowl with chopped romaine lettuce as the base.
- Arrange the cherry tomatoes, sweet corn, and diced cucumber around the bowl in sections.
- Place the sliced grilled chicken on top of the salad.
- Add a generous spoonful of guacamole or avocado crema in the center.
- Sprinkle red pepper flakes over the top for garnish.
- Serve immediately and enjoy fresh.
