Description

Welcome, seafood lovers! If you’re looking for a delicious and easy-to-make dish that brings out the best of fresh flavors, then look no further than this recipe for Golden Seared Cod with Herb Butter Sauce. Perfectly seared cod fillets topped with a buttery herb sauce is a meal that will impress your guests and family. Whether you’re a novice cook or a seasoned chef, this recipe is a must-try.

Ingredients

Scale

  • 4 (6-ounce) cod fillets
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper, to taste
  • 4 tablespoons unsalted butter
  • 1 garlic clove, minced
  • Juice of 1/2 lemon
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon fresh chives, snipped

Optional Substitutions

  • Substitute cod with halibut, haddock, or any other firm white fish if unavailable.
  • Use ghee instead of butter for a lactose-free version.
  • Replace fresh herbs with dried versions in smaller quantities.

Instructions

Step 1: Prepare the Fish

  1. Pat the cod fillets dry with paper towels. Season both sides with salt and pepper. This step helps in achieving a golden, crispy crust.

Step 2: Sear the Cod

  1. Heat olive oil in a large skillet over medium-high heat until shimmering but not smoking.
  2. Carefully place the cod fillets in the skillet and cook for about 4 minutes on one side until the underside is crisp and golden brown.
  3. Gently flip the cod using a spatula and cook for another 3 minutes or until the fish flakes easily with a fork.

Step 3: Prepare the Herb Butter Sauce

  1. Remove the cod from the skillet and keep it warm on a plate tented with foil.
  2. In the same skillet, reduce the heat to medium. Add butter and minced garlic, cooking until the butter has melted and the garlic is fragrant (about 1 minute).
  3. Remove the skillet from heat and stir in lemon juice, parsley, dill, and chives.

Step 4: Serve

  1. Spoon the herb butter sauce over the warm cod fillets and serve immediately.

Pro Tips:

  • Ensure your skillet is hot before adding the fish to prevent sticking.
  • Use a fish spatula to make flipping easier and avoid breaking the fillets.
  • If your cod is very thick, you may need to reduce the heat and cook for a longer time to ensure it cooks through without burning the outside.

Notes

  • Use fresh herbs whenever possible to maximize flavor.
  • For a zesty kick, add a dash of white wine to the sauce.
  • If your fillets are very thick, finish cooking them in the oven to prevent over-browning.
