Frozen Peanut Butter Banana Split Cups Recipe

  • Author: Maria

Description

Frozen Peanut Butter Banana Split Cups are not just a treat to your taste buds but a journey back to those nostalgic days of enjoying a classic banana split at your local diner. What makes these little cups special is their ability to marry the creamy richness of peanut butter with the sweet charm of bananas and chocolate, all in one bite-sized delight. My personal connection to this recipe goes back to my childhood, where peanut butter was a staple in our household treats. This recipe brings a creative twist to traditional flavors, ensuring each bite is both a comfort and a new discovery.

Ingredients

Scale
  • 1 cup creamy peanut butter
  • 1/2 cup Greek yogurt
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 2 ripe bananas, sliced
  • 1 cup chocolate chips, melted
  • 1/4 cup chopped peanuts
  • Fresh strawberries, halved
  • Extra chocolate chips and chopped peanuts for garnish

Optional substitutions:

  • For a vegan version, substitute Greek yogurt with a plant-based yogurt alternative.
  • Agave syrup can be used in place of honey or maple syrup for a different sweetness profile.

Instructions

  1. Prepare the Chocolate Shells: Melt the chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between, until smooth. Spoon melted chocolate into silicone muffin cups, using a spoon to coat the sides evenly. Place in the freezer for 10 minutes to harden.
  2. Make the Peanut Butter Filling: In a mixing bowl, combine peanut butter, Greek yogurt, honey or maple syrup, and vanilla extract. Mix until smooth and creamy.
  3. Assemble the Cups: Remove chocolate shells from the freezer. Spoon the peanut butter mixture into the chocolate cups, filling them almost to the top. Place a banana slice on top of each cup, followed by a strawberry half. Sprinkle with chopped peanuts and extra chocolate chips.
  4. Freeze: Place the assembled cups in the freezer for at least 2 hours, or until completely set.
  5. Serve: Once set, remove the cups from the silicone molds. Garnish with additional chopped peanuts and chocolate chips if desired. Serve immediately and enjoy these delightful frozen treats!

Notes

  • For those looking for an even richer flavor, try drizzling a little extra melted chocolate on top of each cup before the final freeze.
  • Ensure the bananas are ripe but firm, to add a nice texture contrast to the creamy peanut butter filling.
