Ingredients

- 12 ounces center-cut bacon or pancetta, cut into strips
- 8 ounces cremini mushrooms, quartered
- ½ yellow onion, chopped
- 1 cup sun-dried tomatoes, chopped
- ½ cup vinegar or white wine
- 1 cup heavy cream or half-and-half
- ½ cup peas
- 1 head of roasted garlic, cloves removed
- 1 cup grated Parmesan cheese, divided
- Fresh basil leaves (for garnish)

Instructions
Step 1: Prepare the Pasta
Cook the farfalle pasta according to the package instructions, ensuring it’s al dente.
Step 2: Cook the Chicken
Heat olive oil in a large skillet over high heat. Season the chicken with kosher salt and black pepper, then cook for 3-4 minutes until browned. Set the chicken aside.
Step 3: Cook the Bacon or Pancetta
In the same skillet, cook the pancetta until crispy (5-6 minutes). Leave the rendered fat in the pan for added flavor.
Step 4: Sauté the Vegetables
Add the mushrooms and onions to the skillet and cook until golden brown, about 5-7 minutes. Transfer to the bowl with the chicken and bacon.
Step 5: Create the Sauce
Deglaze the pan by cooking the sun-dried tomatoes with vinegar or white wine until reduced by half. Add the heavy cream, peas, and roasted garlic. Stir in the chicken mixture and ¾ cup of Parmesan cheese.
