Description

Welcome! If you’re a fan of hearty pasta dishes, you’ll love this Cheesecake Factory-inspired Farfalle with Chicken and Roasted Garlic. Combining tender chicken, rich roasted garlic, and flavorful pancetta, this dish is perfect for any pasta lover looking to recreate restaurant-quality meals at home.

Ingredients

Scale

  • 1 pound of farfalle pasta (bow-tie pasta)
  • 2 tablespoons of extra virgin olive oil
  • 2 boneless, skinless chicken breasts, cut into 1-inch cubes
  • ½ teaspoon kosher salt
  • 1 teaspoon ground black pepper
  • 12 ounces center-cut bacon or pancetta, cut into strips
  • 8 ounces cremini mushrooms, quartered
  • ½ yellow onion, chopped
  • 1 cup sun-dried tomatoes, chopped
  • ½ cup vinegar or white wine
  • 1 cup heavy cream or half-and-half
  • ½ cup peas
  • 1 head of roasted garlic, cloves removed
  • 1 cup grated Parmesan cheese, divided
  • Fresh basil leaves (for garnish)

Optional Substitutions:

  • For a dairy-free option, substitute heavy cream with coconut cream.
  • For a gluten-free version, use gluten-free farfalle.

Instructions

Step 1: Prepare the Pasta

Cook the farfalle pasta according to the package instructions, ensuring it’s al dente.

Step 2: Cook the Chicken

Heat olive oil in a large skillet over high heat. Season the chicken with kosher salt and black pepper, then cook for 3-4 minutes until browned. Set the chicken aside.

Step 3: Cook the Bacon or Pancetta

In the same skillet, cook the pancetta until crispy (5-6 minutes). Leave the rendered fat in the pan for added flavor.

Step 4: Sauté the Vegetables

Add the mushrooms and onions to the skillet and cook until golden brown, about 5-7 minutes. Transfer to the bowl with the chicken and bacon.

Step 5: Create the Sauce

Deglaze the pan by cooking the sun-dried tomatoes with vinegar or white wine until reduced by half. Add the heavy cream, peas, and roasted garlic. Stir in the chicken mixture and ¾ cup of Parmesan cheese.

Step 6: Combine and Serve

Add the cooked farfalle to the skillet and mix everything together. Cook for 3 minutes, stirring to combine. Serve hot with the remaining Parmesan cheese and fresh basil leaves.

Notes

  • Roasting Garlic: For a sweeter garlic flavor, roast a whole head of garlic wrapped in foil at 375°F for 40 minutes.
  • Fresh vs. Dried Basil: Use fresh basil leaves for a vibrant flavor. Dried basil can be substituted, but the taste won’t be as strong.
  • Cooking Tip: Avoid overcooking the pasta to ensure it holds its shape when combined with the sauce.
