This Sweet Cinnamon Banana Bread with a Snickerdoodle Twist offers a perfect balance of moist banana goodness and a crunchy snickerdoodle topping. Whether you’re baking for breakfast, a snack, or dessert, this recipe promises to elevate your baking game!

Ingredients

Scale
  • 3 ripe bananas, mashed
  • ½ cup (113 g) unsalted butter, softened
  • ¾ cup (150 g) granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 ½ cups (190 g) all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 tsp ground cinnamon

For the Snickerdoodle Topping

  • 2 tbsp granulated sugar
  • 1 tsp ground cinnamon

Instructions

Step1: Preheat the Oven

Begin by preheating your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper to ensure easy removal.

Step2: Cream Butter and Sugar

In a large mixing bowl, cream together the softened butter and sugar until light and fluffy. This step helps create a tender crumb texture in the bread.

Step3: Mix Wet Ingredients

Add the egg, vanilla extract, and mashed bananas to the butter mixture. Stir well to combine all the ingredients.

Step4: Prepare the Dry Ingredients

In a separate bowl, whisk together the flour, baking soda, salt, and ground cinnamon. Gradually add this dry mixture to the wet ingredients, stirring until just combined. Avoid overmixing, as it can lead to a dense loaf.

Step5: Add Snickerdoodle Topping

In a small bowl, mix the sugar and cinnamon for the topping. Pour the batter into the prepared loaf pan and sprinkle the snickerdoodle topping generously over the top.

Step6: Bake the Bread

Place the loaf pan in the oven and bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean. Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Notes

  • Use overripe bananas: The riper the bananas, the sweeter and more flavorful your bread will be.
  • Do not overmix: Stir just until the dry ingredients are incorporated to keep the bread light and fluffy.
  • Check for doneness: Use a toothpick to ensure the bread is fully cooked without being overbaked.
