Whether you call it Italian Sausage Soup or Creamy Sausage Soup, this recipe is a must-try dinner option for any night of the week.

Ingredients

Scale
  • 1 lb Italian sausage (mild or spicy, based on preference)
  • ½ cup diced onion
  • 2 cloves minced garlic
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper
  • 4 cups chicken broth
  • 1 can (14.5 oz) petite diced tomatoes
  • 8 oz ditalini pasta
  • 8 oz cream cheese, softened and cubed
  • ½ cup grated Parmesan cheese
  • ¼ cup fresh basil (or parsley for garnish)

Optional substitutions:

  • Replace chicken broth with vegetable broth for a vegetarian base.
  • Use turkey sausage for a lighter option.
  • Swap out ditalini pasta for orzo or small shells.

Instructions

Step1: Brown the Sausage

In a large pot or Dutch oven, cook the Italian sausage over medium heat until browned and fully cooked. Drain any excess grease.

Step2: Sauté the Aromatics

Add the diced onion to the pot and cook for 1-2 minutes until softened. Stir in minced garlic, Italian seasoning, salt, and black pepper, cooking for another minute to release the flavors.

Step3: Combine the Base

Pour in the chicken broth and add the diced tomatoes. Stir in the ditalini pasta, ensuring it’s submerged. Bring the mixture to a boil. Reduce heat and let it simmer for 8 minutes or until the pasta is al dente.

Step4: Add the Creamy Goodness

Lower the heat to medium-low and stir in the cubed cream cheese and grated Parmesan. Continue stirring until the cheeses are fully melted and the soup thickens.

Step5: Serve and Garnish

Ladle the soup into bowls and top it off with fresh basil or parsley. Serve hot with crusty bread or garlic bread for dipping.

Notes

  • Cube the cream cheese before adding it to help it melt smoothly into the soup.
  • Stir the pasta occasionally while cooking to prevent sticking.
  • Don’t skip browning the sausage – those crispy bits add extra flavor to the broth!
