  • 1 lb sweet Italian sausage – Feel free to use spicy Italian sausage for a bit of heat.
  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 3 garlic cloves, minced
  • 6 cups chicken broth – Low-sodium is best if you want to control the salt content.
  • 1 cup heavy cream – Sub with coconut cream for a dairy-free option.
  • 1 1/2 cups ditalini pasta – You can swap this with gluten-free pasta if needed.
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes (optional) – Adds a subtle kick of heat.
  • Salt and pepper to taste
  • 4 cups fresh spinach, roughly chopped – Kale can also be used as an alternative.
  • 1 cup grated Parmesan cheese – Plus more for garnish.
  • Fresh parsley, chopped for garnish

Instructions

 

Step 1: Cook the Sausage

In a large pot, heat the olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it up into small pieces as it cooks. Once fully browned, remove the sausage with a slotted spoon and set aside.

Step 2: Sauté the Aromatics

In the same pot, add the diced onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.

Step 3: Prepare the Broth

Pour in the chicken broth, bringing it to a boil, then reduce to a simmer. Stir in the heavy cream, oregano, basil, red pepper flakes (if using), and season with salt and pepper.

Step 4: Add the Pasta

Next, stir in the ditalini pasta and cook for about 8 minutes, or until the pasta is al dente.

Step 5: Combine the Ingredients

Return the cooked sausage to the pot and add the chopped spinach. Cook until the spinach has wilted, about 2 minutes.

Step 6: Stir in the Parmesan

Turn off the heat and stir in the grated Parmesan cheese until fully melted and well incorporated.

Step 7: Serve
