Whether you’re following a keto diet or just love flavorful fish dishes, this recipe will be your go-to for a quick, wholesome dinner.

Ingredients

Scale

  • 4 cod fillets (6 ounces each, 170g)
  • 1 tbsp olive oil (15ml)
  • ½ tsp salt (2g)
  • ¼ tsp black pepper (1g)
  • 3 cloves garlic (minced, 9g)
  • 1 cup heavy cream (240ml)
  • ½ cup chicken broth (120ml)
  • ½ cup grated Parmesan cheese (50g)
  • ½ cup sun-dried tomatoes (chopped, 55g)
  • 3 cups baby spinach (90g)
  • ½ tsp Italian seasoning (2g)

Optional Substitutions:

  • Replace heavy cream with coconut cream for a dairy-free version.
  • Use vegetable broth instead of chicken broth for a vegetarian option.

Instructions

Step 1: Prepare the Cod

Start by heating olive oil in a large skillet over medium-high heat. Season the cod fillets with salt and pepper, and place them in the skillet. Sear each side for about 4 minutes or until a golden crust forms. Once done, remove the cod from the skillet and set it aside.

Step 2: Sauté the Garlic

In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant. Garlic adds that classic Tuscan flavor, making the sauce irresistible!

Step 3: Create the Creamy Sauce

Pour in the heavy cream and chicken broth, stirring to combine. Allow the mixture to come to a simmer. Once simmering, add the grated Parmesan cheese and stir until it melts into the sauce, creating a luscious texture.

Step 4: Add Flavorful Ingredients

Now it’s time to enhance the sauce! Stir in the sun-dried tomatoes and Italian seasoning, simmering for another 3–4 minutes to let the flavors meld together. The sun-dried tomatoes provide a slight sweetness that complements the rich cream.

Step 5: Add Spinach

Gently fold in the baby spinach and cook until wilted, which should take about 2 minutes. This adds both color and nutrition to your dish!

Step 6: Finish Cooking the Cod

Return the cod fillets to the skillet, nestling them into the creamy sauce. Let them simmer for another 3–4 minutes, spooning the sauce over the cod, ensuring that it’s fully cooked and reheated.

Notes

  • Fresh Ingredients: Using fresh cod and spinach ensures the best flavor. If possible, buy wild-caught cod for a fresher, more sustainable choice.
  • Don’t Overcook: Cod can dry out quickly if overcooked. Keep an eye on the timing and aim for a flaky but tender texture.
  • Adjust the Sauce: If you prefer a thicker sauce, let it simmer for a few extra minutes, or if you like a thinner consistency, add a bit more broth.
