- 6 hardboiled eggs
- 8 ounces ditalini, small penne, or elbow macaroni
- ¾ cup mayonnaise
- 1 ½ tablespoons Dijon mustard
- 1 teaspoon white vinegar or fresh lemon juice
- 1 clove garlic, finely minced or crushed to paste
- ½ teaspoon kosher salt (adjust to taste)
- ¼ teaspoon smoked paprika
- ¼ teaspoon cayenne pepper
- 2 tablespoons red onion, finely chopped
- 2 tablespoons green onions
Instructions
- Cook the Pasta: Boil the pasta according to package instructions. Add a generous tablespoon of kosher salt to the water for flavor. Once cooked, drain and rinse with cold water to stop the cooking process.
- Prepare the Eggs: While the pasta cooks, peel the hardboiled eggs. Separate the yolks from the whites. Chop the egg whites and set aside. In a large mixing bowl, crush the yolks into a fine powder.
- Make the Dressing: In the bowl with the yolks, whisk together the mayonnaise, Dijon mustard, vinegar or lemon juice, garlic, salt, smoked paprika, and cayenne pepper. Whisk until the dressing is creamy and smooth.
- Combine Ingredients: Add the cooled pasta to the dressing and gently stir to coat each piece of pasta evenly. Fold in the chopped egg whites, red onion, and green onions. Stir until everything is well combined.
- Garnish & Serve: For a final touch, sprinkle extra green onions and paprika on top. Serve immediately for a fresh, creamy dish, or chill it in the fridge to enjoy later.
Notes
- When cooking your pasta, make sure not to overcook it. Slightly undercooked or “al dente” pasta will maintain its texture after being mixed with the creamy dressing.
