Ingredients

  • 2 cups chocolate cookie crumbs
  • 1/2 cup unsalted butter, melted
  • 3 packages (8 oz each) cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • 1/4 cup strong brewed espresso or coffee
  • 1/3 cup chocolate ganache or chocolate syrup
  • Whipped cream, for topping
  • Cocoa powder or chocolate shavings, for garnish

Instructions

  1. Preheat oven to 325°F (163°C) and lightly grease a 9-inch springform pan.
  2. Mix chocolate cookie crumbs with melted butter and press into the pan to form the crust. Set aside.
  3. In a large bowl, beat the cream cheese and sugar until smooth. Add eggs one at a time, mixing after each. Stir in vanilla and sour cream.
  4. Divide the batter into two equal portions. Add the brewed espresso to one portion and mix well.
  5. Pour the plain batter into the crust, then spoon the coffee-flavored batter over it. Swirl with a knife or skewer.
  6. Drizzle chocolate ganache on top and swirl lightly.
  7. Bake for 55–65 minutes, or until center is nearly set. Turn off the oven, crack the door, and let it cool for 1 hour.
  8. Refrigerate the cheesecake for at least 4 hours or overnight.
  9. Before serving, top with whipped cream and garnish with cocoa powder or chocolate shavings.
