Instructions

Step 1: Sear the Cod

  • Heat the olive oil and melt 1 tablespoon of butter in a large skillet over medium-high heat.
  • Season the cod fillets with salt and pepper to taste.
  • Place the cod in the skillet and cook until lightly golden brown and cooked through, approximately 2-3 minutes per side.
  • Remove the cod from the skillet and set aside.

Step 2: Sauté the Tomatoes

  • Add the cherry tomatoes to the same skillet with the remaining olive oil and butter.
  • Cook until the tomatoes are blistered and soft, about 3-5 minutes.

Step 3: Build the Sauce

  • Lower the heat to medium and add chopped garlic, whites of the green onions, and a pinch of red pepper flakes.
  • Sauté until fragrant, about 1 minute.
  • Pour in the chicken broth and bring to a simmer.
  • Allow the mixture to cook for 3 minutes, letting the flavors meld.

Step 4: Finish with Lemon and Butter

  • Add the lemon juice and remaining 1 tablespoon of butter.
