Whether you’re baking for a special occasion or just want to enjoy a delicious homemade treat, these cookies are sure to impress. Let’s dive in!

Ingredients

Scale
  • 2 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 1 egg
  • 2 tsp vanilla extract
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/4 cup granulated sugar (for rolling)
  • 1 tbsp ground cinnamon

Instructions

  • Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper to ensure your cookies bake evenly and don’t stick to the pan.
  • In a medium bowl, whisk together the flour, baking soda, baking powder, and salt. This step is crucial for evenly distributing the leavening agents and salt throughout the dough, ensuring your cookies rise properly.
  • In a large bowl, beat the butter and 1 1/2 cups granulated sugar together until light and fluffy. This should take about 3-4 minutes on medium-high speed with an electric mixer. The mixture should be pale and have a creamy consistency.
  • Beat in the egg and vanilla extract until well combined. Make sure the egg is fully incorporated to give the dough its structure.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix, as this can make the cookies tough instead of tender.
  • In a separate bowl, mix the cream cheese and powdered sugar until smooth and creamy. This is the filling that will give these cookies their signature creaminess.
  • In a small bowl, combine 1/4 cup granulated sugar and ground cinnamon. This will be used to coat the cookies before baking, adding a sweet and spicy crust.
  • Scoop a tablespoon of cookie dough and flatten it in your hand. Place a small dollop of cream cheese mixture in the center and fold the dough around it, rolling it into a ball. This step can be a bit tricky, but with practice, you’ll get the hang of it!
  • Roll the stuffed dough ball in the cinnamon-sugar mixture and place it on the prepared baking sheet. Repeat with the remaining dough, spacing the cookies about 2 inches apart.
  • Bake for 10-12 minutes, or until the edges are lightly golden. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • Chill the Dough: If you find the dough too sticky to work with, try chilling it in the refrigerator for 30 minutes before rolling. This will make it easier to handle and help the cookies keep their shape during baking.
  • Don’t Overbake: These cookies are meant to be soft and chewy, so be careful not to overbake them. They should still be slightly soft in the center when you take them out of the oven.
