Peach Salsa Ingredients:

  • 3 medium yellow peaches (pitted, diced)
  • 1 sweet red bell pepper (diced)
  • ¼ cup red onion (diced)
  • 3 green onions (finely chopped)
  • ½ bunch cilantro (chopped)
  • 2 tbsp freshly squeezed lime juice
  • ¼ tsp chili powder
  • Salt to taste

Cilantro-Lime Chicken Ingredients:

  • 1 lb skinless, boneless chicken breasts (sliced)
  • ½ tsp smoked paprika
  • 1 tsp chili powder
  • ¼ tsp salt
  • Freshly ground black pepper
  • 2 tbsp olive oil
  • 2 tbsp freshly squeezed lime juice
  • 2 tbsp honey
  • 1 tbsp butter

Rice & Garnish:

  • 2 cups cooked jasmine rice
  • Fresh cilantro (chopped)
  • Lime slices for garnish

Instructions

Step 1: Preparing the Peach Salsa

  1. Wash the peaches thoroughly. No need to peel them—just chop and dice.
  2. In a large bowl, combine the peaches, bell pepper, red onion, green onions, cilantro, lime juice, chili powder, and salt. Mix well.
  3. Adjust the seasoning with more salt or lime juice to taste.

Step 2: Cooking the Cilantro-Lime Chicken

  1. Season the sliced chicken breasts with smoked paprika, chili powder, salt, and freshly ground black pepper.
  2. Heat the olive oil in a large skillet over medium-high heat. Once the oil is hot, add the chicken and cook for about 4 minutes undisturbed to sear.
  3. Flip the chicken and cook for an additional 2 minutes. Lower the heat and add lime juice and honey. Stir frequently for about 2 minutes until the chicken is fully cooked.
  4. Remove from heat and stir in the butter to create a rich glaze. Garnish with fresh cilantro.
