  • 8 oz cream cheese, cubed and softened to room temperature
  • Shredded Swiss cheese (for serving)
  • Croutons (store-bought or homemade)

Optional substitutions:

  • Use vegetable broth instead of chicken broth for a lighter option.
  • Substitute cream with milk or a dairy-free alternative like coconut cream for a dairy-free version.

Instructions

Step 1: Melt the butter in a large stockpot over medium heat. Once the butter is melted, add diced onion, carrots, celery, and minced garlic. Sprinkle in the paprika, salt, and pepper. Cook while stirring for about 10 minutes, or until the vegetables soften.

Step 2: Add the chicken broth to the pot, followed by the heavy cream and Dijon mustard. Stir well to combine all the ingredients.

Step 3: Incorporate the cubed chicken, ham, and softened cream cheese. Stir regularly to melt the cream cheese and blend it smoothly into the broth.

Step 4: Continue to cook the soup over medium heat until it’s piping hot and all the ingredients are well combined. Taste the soup and adjust seasoning if necessary.
