For the Topping:

Instructions

Step 1: Prepare the Crust

  1. Preheat your oven to 325°F (165°C) and grease a 9-inch springform pan.
  2. Combine graham cracker crumbs, sugar, and melted butter in a bowl. Press this mixture evenly into the bottom of the pan to form the crust.

Step 2: Create the Creamy Filling

  1. In a large mixing bowl, beat the softened cream cheese, sugar, and vanilla extract until smooth and creamy.
  2. Add eggs one at a time, mixing until just combined. Stir in the lemon juice and zest for a burst of citrus flavor.

Step 3: Assemble the Cheesecake

  1. Pour half of the cream cheese mixture over the prepared crust.
  2. Add dollops of cherry pie filling and use a knife to gently swirl it into the mixture.
  3. Repeat with the remaining cream cheese mixture and cherry filling.

Step 4: Bake the Cheesecake

  1. Bake for 50-60 minutes, or until the edges are set and the center is slightly jiggly.
  2. Turn off the oven and leave the cheesecake inside with the door ajar for 1 hour to cool gradually.

Step 5: Chill and Garnish

  1. Refrigerate the cheesecake for at least 4 hours or overnight.
  2. Before serving, garnish with whipped cream, lemon slices, and whole cherries.

Notes

  • Use fresh lemon juice for the best flavor.
  • Ensure cream cheese is at room temperature to avoid lumps.
  • Swirl the cherry filling gently for a beautiful marbled effect.
