Description

Welcome to your next favorite side dish recipe – Cheesy Garlic Roasted Potatoes! Whether you are hosting a family dinner or looking to elevate your weeknight meals, this recipe offers the perfect combination of crispy, cheesy, and garlicky goodness. If you’re a fan of potatoes, cheese, or garlic, this is a must-try dish that will leave everyone asking for seconds!

Ingredients

Scale

  • 15 to 20 baby potatoes, thoroughly washed
  • 4 tablespoons melted butter
  • 1 cup grated parmesan cheese
  • ½ teaspoon cracked black pepper
  • 1 tablespoon minced garlic (or garlic powder)
  • 1 tablespoon paprika
  • 1 teaspoon salt
  • 1 teaspoon Italian seasoning
  • Garlic cloves (with skin on) for garnish
  • Fresh chives, chopped for garnish

Instructions

Step 1: Preheat your oven to 400°F (200°C).
Step 2: Prep the potatoes by cutting a thin lengthwise slice off the bottom of each potato to create a flat surface. Place two chopsticks on opposite sides of a potato and cut small squares into the top, stopping when your knife hits the chopsticks. Repeat for all potatoes.
Step 3: Pour melted butter over the potatoes and brush them to coat the cuts.
Step 4: In a bowl, mix the parmesan, black pepper, garlic, paprika, salt, and Italian seasoning. Coat the potatoes with this mixture, making sure the seasoning goes between the squares.
Step 5: Arrange the potatoes on a baking sheet, ensuring even spacing. Bake for 30 to 40 minutes until the potatoes are golden and crispy on the outside and tender on the inside.
Step 6: Once out of the oven, garnish with chopped chives and serve immediately. Enjoy!

Notes

  • Cheesy Garlic Roasted Potatoes tips: For a more garlicky punch, roast whole garlic cloves with the potatoes and serve them alongside for extra flavor.
  • Potato roasting suggestions: Use baby Yukon Gold or red potatoes for a creamier texture inside.
  • For extra crunch, finish the potatoes under the broiler for the last 3-4 minutes of cooking.
