Ingredients
- 15 to 20 baby potatoes, thoroughly washed
- 4 tablespoons melted butter
- 1 cup grated parmesan cheese
- ½ teaspoon cracked black pepper
- 1 tablespoon minced garlic (or garlic powder)
- 1 tablespoon paprika
- 1 teaspoon salt
- 1 teaspoon Italian seasoning
- Garlic cloves (with skin on) for garnish
- Fresh chives, chopped for garnish
Instructions
Step 1: Preheat your oven to 400°F (200°C).
Step 2: Prep the potatoes by cutting a thin lengthwise slice off the bottom of each potato to create a flat surface. Place two chopsticks on opposite sides of a potato and cut small squares into the top, stopping when your knife hits the chopsticks. Repeat for all potatoes.
Step 3: Pour melted butter over the potatoes and brush them to coat the cuts.
Step 4: In a bowl, mix the parmesan, black pepper, garlic, paprika, salt, and Italian seasoning. Coat the potatoes with this mixture, making sure the seasoning goes between the squares.
Step 5: Arrange the potatoes on a baking sheet, ensuring even spacing. Bake for 30 to 40 minutes until the potatoes are golden and crispy on the outside and tender on the inside.
Step 6: Once out of the oven, garnish with chopped chives and serve immediately. Enjoy!
