For the Pasta and Beef:

  • 12 oz (340g) bowtie pasta (farfalle)
  • 1 lb (450g) ground beef
  • 2 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • ½ tsp red pepper flakes (optional, for spice)
  • Salt and pepper to taste

For the Garlic Butter Sauce:

  • 3 tbsp unsalted butter
  • 2 cloves garlic, minced
  • 1 tbsp all-purpose flour
  • 1 cup (240ml) milk (whole or 2%)
  • 1 cup (100g) shredded mozzarella cheese
  • ½ cup (50g) grated Parmesan cheese
  • 2 tbsp fresh parsley, chopped (for garnish)

Instructions

Step1: Cook the Pasta

  1. Bring a large pot of salted water to a boil.
  2. Cook the bowtie pasta according to package instructions until al dente.
  3. Before draining, reserve ½ cup of pasta water (to adjust the sauce later).
  4. Drain and set aside.

Step2: Brown the Ground Beef

  1. Heat 2 tbsp olive oil in a large skillet over medium heat.
  2. Add the ground beef and cook for 5-7 minutes, breaking it apart until browned.
  3. Stir in chopped onion and minced garlic. Cook for 3 minutes until onions are soft.
  4. Season with Italian seasoning, red pepper flakes, salt, and pepper.
  5. Remove from skillet and set aside.

Step3: Make the Garlic Butter Sauce

  1. Melt 3 tbsp butter in the same skillet over medium heat.
  2. Add 2 cloves minced garlic and sauté for 1 minute until fragrant.
  3. Sprinkle in 1 tbsp flour, stirring for 1-2 minutes to make a roux.
  4. Slowly pour in 1 cup milk, whisking constantly to prevent lumps.
  5. Simmer for 3 minutes until slightly thickened.

Step4: Combine Everything

  1. Lower heat and stir in mozzarella and Parmesan cheese until melted.
  2. Add the cooked pasta and beef mixture back into the skillet. Toss everything together.
  3. If the sauce is too thick, add a splash of reserved pasta water to loosen it.
