As you dive into each velvety bite, you’ll find yourself transported to a whimsical realm where every flavor is a celebration.

Ingredients

Scale
  • 2 1/2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1 teaspoon baking soda
  • 1 teaspoon fine salt
  • 1 teaspoon cocoa powder
  • 1 1/2 cups vegetable oil
  • 1 cup buttermilk, room temperature
  • 2 large eggs, room temperature
  • 2 tablespoons black food coloring
  • 1 teaspoon vanilla extract
  • 1 teaspoon distilled white vinegar
  • 1/2 cup prepared plain hot coffee
  • 1 cup blackberry preserves
  • Fresh blackberries for garnish
  • Edible glitter (red and black)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch cake pans.
  2. In a large bowl, sift together flour, sugar, baking soda, salt, and cocoa powder.
  3. In another large bowl, gently beat together the oil, buttermilk, eggs, food coloring, vanilla, and vinegar. Mix the wet ingredients into the dry ingredients until just combined. Then add the coffee and stir until smooth.
  4. Divide the batter evenly between the prepared pans. Bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.
  5. Allow cakes to cool completely in the pans on a wire rack. Once cool, remove from pans and layer with blackberry preserves. Cover the cake with a thin layer of preserves and arrange fresh blackberries on top. Sprinkle with edible glitter.

Notes

Optional substitutions: If you have dietary restrictions or preferences, you can use almond milk instead of buttermilk for a dairy-free option. Additionally, gluten-free flour can be substituted for all-purpose flour to make this recipe gluten-free.
