Ingredients

Scale

Main Ingredients:

  • 1 large head of cabbage: Blanched to soften the leaves.
  • 1 lb (450 g) ground beef: Lean beef works best.
  • 1 cup cooked rice: White or brown rice for added fiber.
  • 1 small onion, finely chopped: Adds sweetness and depth.
  • 2 cloves garlic, minced: Enhances the flavor.
  • 1 tsp paprika: Smoked or sweet, depending on your preference.
  • 1/2 tsp dried thyme: For an earthy touch.
  • 1/2 tsp ground black pepper: For a hint of spice.
  • 1/2 tsp salt: To taste.

For the Sauce:

  • 2 cups tomato sauce: Canned or homemade.
  • 1/2 cup beef broth: Adds richness.
  • 2 tbsp brown sugar (optional): Balances acidity.
  • 1 tbsp olive oil: For sautéing.

For Garnish:

  • Fresh parsley: Chopped, for a pop of color.

Optional Substitutions:

  • Replace beef with ground turkey or plant-based meat for a healthier twist.
  • Use quinoa or cauliflower rice for a low-carb version.

Instructions

Step 1: Preheat and Prepare

  • Preheat your oven to 375°F (190°C).
  • Carefully remove the outer leaves of the cabbage, ensuring they remain whole. Blanch the leaves in boiling water for 2–3 minutes to soften, then set aside to cool.

Step 2: Make the Filling

  • In a large bowl, combine ground beef, cooked rice, chopped onion, garlic, paprika, thyme, pepper, and salt. Mix until well combined.

Step 3: Assemble the Rolls

  • Lay a cabbage leaf flat on a clean surface. Place a portion of the beef mixture in the center.
  • Fold in the sides of the leaf, then roll it tightly to form a parcel. Repeat for all leaves.

Step 4: Sauté and Layer

  • Heat olive oil in a skillet over medium heat. Sauté any leftover chopped cabbage for 2–3 minutes and spread it across the bottom of a baking dish.
  • Arrange the stuffed cabbage rolls seam-side down in the dish.

Step 5: Prepare the Sauce

  • In a bowl, mix tomato sauce, beef broth, and brown sugar (if using). Pour this sauce evenly over the rolls.

Step 6: Bake to Perfection

  • Cover the dish with aluminum foil and bake for 45 minutes. Remove the foil and bake for an additional 10 minutes for a lightly caramelized top.

Notes

  • Use Fresh Ingredients: Fresh cabbage and herbs elevate the dish.
  • Prevent Cracking: Ensure cabbage leaves are pliable by blanching them properly.
  • Even Cooking: Arrange rolls snugly in the dish for uniform cooking.
