Ingredients

Scale
  • 3 ripe bananas, mashed
  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk

For the frosting:

  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  • Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  • Whisk together flour, baking powder, baking soda, and salt in a bowl.
  • Cream together butter and sugar in another large bowl until light and fluffy. Beat in eggs one at a time, then stir in vanilla.
  • Alternate adding the flour mixture and buttermilk to the creamed mixture, starting and ending with the flour mixture. Fold in mashed bananas.
  • Pour the batter into the prepared pan and bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  • To make the frosting, beat cream cheese and butter together until smooth. Gradually add powdered sugar and vanilla, beating until creamy.
  • Once the cake is completely cooled, spread the frosting evenly over the top.

Notes

  • Enhance Flavor: Add a teaspoon of cinnamon or a pinch of nutmeg to the batter for a warm, spiced flavor.
  • Texture Improvement: For a denser texture, substitute half of the all-purpose flour with whole wheat flour.
  • Equipment: Using a stand mixer can make creaming the butter and sugar much easier and quicker.
