  • 6 slices of chicken , chopped
  • 3 cups diced potatoes (about ½-inch cubes)

  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 teaspoon fresh thyme leaves
  • ½ teaspoon paprika
  • 1 cup shredded sharp cheddar cheese
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons olive oil

Instructions

Step 1: Preheat and Prepare

Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.

Step 2: Cook the chicken

In a large skillet over medium heat, cook the bacon until crispy. Transfer it to a paper towel-lined plate to drain, keeping the bacon grease in the skillet.

Step 3: Sauté the Vegetables

Add diced onion to the skillet with the reserved chicken grease and sauté until softened (about 3 minutes). Add minced garlic and cook for another minute until fragrant.

Step 4: Sear the Chicken

Push the onions to the side, increase the heat to medium-high, and add the chicken breasts. Season them with salt, pepper, and paprika. Sear for 3-4 minutes on each side until golden brown. Remove from the skillet and slice into strips.
